Are you looking for a little variety to add to your breakfast routine?  Start your morning off on the right foot by making quinoa for breakfast! Quinoa is a South American grain that is high in protein, contains all of the essential amino acids and also contains calcium. I love quinoa as a dinner side dish and have regularly made a cold quinoa salad to bring to potlucks. But my favorite way to eat quinoa is as a cold cereal! Its a great alternative to boxed cereals and oatmeal. It can be extremely convenient as well- make a large quantity at the beginning of the week, and keep it in the fridge for breakfast all week long. Here is my recipe for a quick, filling and healthy breakfast:

  • 1/2-1 cup cooked quinoa
  • 1/4 cup raisins or dried tart cherries
  • 1/8 cup almonds or pecans
  • 1/2 cup milk, almond milk, soy milk or other variety
  • Drizzle of honey (optional)

Add quinoa, dried fruit, and nuts to a bowl. Drizzle with honey if desired and pour milk over the top. Enjoy!
