Who else loves watermelon as much as I do? I always know its summer when I start to see watermelon at the local supermarket. Cold watermelon great after a hot workout and is a good source of the phytonutrient lycopene which can help to prevent prostate disease and improve blood circulation. This cold salad is the perfect addition to any summer BBQ. Keep it in the fridge for a quick afternoon snack as well!
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 seedless watermelon, cut into 1″ cubes
- 2-3 cucumbers, cut into 1″ cubes
- 1/2 cup crumbled feta
- 1/2 cup mint leaves, thinly sliced
Toss watermelon, cucumbers, and feta cheese together in a large bowl. Drizzle the lime juice and olive oil over the watermelon mixture; toss to coat. Sprinkle mint over the salad; toss and enjoy!
